This is one of my absolute favorite recipes. It surpasses any store bought frosting by miles and it is REALLY easy. Use it as a filling or to frost a cake. Its like eating fluffy, creamy chocolate chips.
Ingredients:
16 ounces semi-sweet chocolate chips
8 ounces (1 cup) heavy cream
Directions:
1. Place the chocolate chips in a Kitchenaid or mixing bowl.
2. Heat the heavy cream in a microwavable container and microwave for 3 to 4 minutes on high, or until it just begins to simmer. Don't let the cream boil over.
3. Pour the cream over the chocolate chips and let stand for about 10 minutes. The chocolate chips should be softened at this point.
4. Mix using an electric mixer for 3-4 minutes, or until the frosting is the consistency that you want.

Hi Kathryn,
would you use the same ratio for white chocolate?
Thanks for sharing your knowledge!!
Nicole
White chocolate works differently than regular chocolate. It would have to be modified. I’ll have to post a white chocolate ganache recipe soon!
Is it possible to add a pin button so I can use this on Pinterest?
I will work on adding a pin button. In the meantime, you can always add a pin by logging into your pinterest homepage and “add pin” by url. Just copy the page address into where it asks for the url and it will let you choose a pic from the page, then its added. I am working on making the pinning easier though. Thank you for the suggestion!
Okay, its added now at the bottom of each post. HAPPY PINNING!
SERIOUSLY? That sounds absolutely devine. Now I'll have to bake a cake just to try it out….following your blog my be a detrement to my efforts to lose weight
Speaking as somebody who just ate this ganache frosting a few days ago (made by Kathryn's very capable hands)… this frosting is ridiculously heavenly! I couldn't stop eating it! Highly recommended!
Will I be able to frost a box cake mix or will I need more? I am making it this weekend, so excited. Thanks!
Yes, this recipe will be enough. A tip for you: if it seems to be taking too long to whip, then whip it half at a time. Enjoy!
