
Red Velvet Cake is good, but Blue is even better! I love the rich blue color you get with this recipe, and it is a very simple/easy one that uses a box mix as a base. Enjoy.
Blue Velvet Cake
Recipe source: Betty Crocker
1 box white cake mix
1-1/4 cups buttermilk
1/3 cup vegetable oil
3 eggs
1 Tablespoon unsweetened cocoa powder
2 teaspoons royal blue paste food coloring*
1 toothpickful violet paste food coloring
1. Preheat oven to 325F. Grease bottom and sides of three 8-inch round cake pans (or spray with non-stick baking spray).
2. In a large bowl, beat all cake ingredients with an electric mixer on low speed for about 30 seconds or until moistened. Beat on medium speed for 2 minutes, scraping bowl occasionally.
3. Divide batter evenly among pans. Bake 23-28 minutes or until top springs back when lightly touched in the center. Cool 15 minutes; remove from pans and cool completely on wire racks.
*Tip- paste food coloring is the same as the wilton fondant food coloring gel that you get in the small round containers at Michaels, Joanns, or Walmart. IT IS NOT the same as regular food coloring.

You would need approximately 40 cups of batter for that size of cake (as long as it is the typical 3-4 inch high tier). If you know how much your recipe yields then you can figure it out that way. If you don't know how much the recipe yields, make a batch up and find out. Hope that helps you!

I was wanting more of an “ocean blue” for my sons birthday cake so I bought the wilton brand teal aqua instead of royal blue. Will this still need some purple added or will it be fine without? I don’t neccessarily need a deep blue and a blue green would be ok. Any help would be appreciated. Thanks! -Robyn
I wouldn’t add the purple in that case. The teal aqua might turn out more green than not. If you have royal blue, I might mix the royal blue AND the teal aqua… but you’re probably okay with just the teal aqua. Let me know how the color turns out for you.
BEAUTIFUL!!!! I did not add anything else to the Aqua Teal and I used the entire bottle because I made a double batch. I did however use 8 egg whites in place of 6 whole eggs to make sure I didn’t get a green. Sure! No changes necessary. You can make any kind of cake into cake balls. I would suggest coloring the frosting used to hold the cake ball together so it is a matching blue to get the full effect.
I am so glad I found this recipe! My son wants a BLUE Smurf birthday and this color is perfect! All the others I found had comments on the food coloring (they used actual drops) making the cake taste funny…do you think that problem happens with the paste as well? I'm still making it I just wondered if it changed the flavor at all?
The great thing about fondant coloring gel is that it takes much less than food coloring to do the same job. Also, there is very little taste associated with it. So you should be fine! I hope he likes his cake!
Would I use similar measurements when using the AmeriColor Gel Paste food coloring? I got rid of all of my old Wilton jars since they were old and am transitioning to the gel coloring in the bottles. Thanks!

If you used just chocolate cake with red coloring it might look right, may not taste much like red velvet cake though but that’s a real subtle difference.
I was unable to find the wilton fondant food coloring gel but I found food coloring gel can I use that?
Basic food coloring gel will not work nearly as well. It has to be a fondant coloring gel.
I'm a little confused about the recipe. Do you follow the instructions from the box then add the additional ingredients? Also, can this recipe be used for cupcakes? Any advice will be helpful.

I hope you see this before trying it out yourself! Lol. Just use the mix dry, from the box. then add only the ingredients (and use directions)listed in the recipe above. Don't even look at the recipe on the box.

Whole eggs will give the blue more of a green color, whereas egg whites eliminate the extra yellow color.
